What to do with your Amaranth Greens
If you haven’t yet figured it out, you can do almost anything with these gorgeous greens. I’ve been treating these pretty leaves like spinach. Whatever you can do with spinach, you can do with amaranth greens. They’re great lightly steamed and seasoned, they’re a great salad green, they’re kind of perfect.
Amaranth greens (or quelites) have been eaten for a long time. Here’s a little history I posted before.
This past week:
1. I’ve chopped some into a chopped bean salad where I put a can of rinsed beans + chopped up various crunchy veggies I had in the fridge (I had celery, bell pepper jicama and carrot) + cheese (parm) + salad dressing (you can use bottled or I just squeezed a 1/2 lemon and added a splash of balsamic and drizzled olive oil ’til it tasted good) + salt & pepper
2. I tossed some into my stir fry ’til it wilted and
3. Today I plan to use up my bunch by cramming as many leaves as I can on top my simple tuna salad sammy (can of tuna in water drained + mayo + dill) - I know, I know, it’s not the fancy scrumptious italian way in olive oil with olives and red onion like Chris Bianco does at Pane…but it’s the way I make it at home. My mom made it with the mayo and my college roomie added the dill weed and now it’s my way.

I just checked out their website and they post some pretty delicious looking recipes. The latest is for runner beans/green beans. How perfect, it’s green bean time for our CSA too!

Seasonal recipe No 56: Runner beans with cream and savory
A different way with runner beans from Sarah Raven’s Garden Cookbook. She calls it ‘a delicious soft, creamy dish that is good with roast chicken. It also makes a tasty quick pasta sauce.’ If you don’t have savory, you can use thyme instead.
Preparation/cooking: 20 minutes
Ingredients
450g runner beans (approx 2 cups)
salt and black pepper
150ml double cream (about 3/4 cup)
1 garlic clove, peeled
1 tbsp chopped summer savory or thyme, plus more to serve
grated parmesan cheese, to serve
Method
String and slice the beans and cook them uncovered in rapidly boiling salted water for 3 minutes until they are just tender. Plunge into cold water and drain.
Put the cream, garlic clove and savory or thyme in a saucepan. Add salt and pepper. Bring to the boil and simmer gently for 2 minutes. Remove from the heat and leave for 10 minutes for the flavours to merge. Take out the garlic.
Add the beans, put back on the heat and stir to heat them through. Scatter more savory or thyme and plenty of parmesan over the top.

Good Morning Everyone!
It’s Jen here…I’m on an extended vacation with my family in San Diego. So, I apologize if we haven’t posted as many pictures and such from the farm.
At home, I don’t have cable. But, here in Carlsbad, TV! Don’t worry, I’m not just sitting here with my new baby being a couch potato. But when I get a spare few minutes, it’s Food TV or the new Cooking Channel. So fun. I miss watching Two Fat Ladies and Barefoot Contessa. I’ve discovered again old Julia Child and Galloping Gourmet reruns. I’ve also found a few new greats like Rachel Allen: Bake and Ten Dollar Dinners.
I hear it’s been cool enough to go outside. I think that means grilling. For me, it’s usually too darn hot to stand around outside. But, right now, it might be OK. Here’s a great looking recipe for grilled meats and veggies.
I’m thinking that summer squash needs some grilling love. I’d also grill the potatoes and onions too. Yum! This recipe includes an awesome looking marinade/sauce. Usually I’m a S&P&OO (salt and pepper and olive oil) fan for all of the cooking of the veggies but this is something I really want to try out!! Enjoy!
