		<title>What to do with your Amaranth Greens</title>

		<description><![CDATA[If you haven&#8217;t yet figured it out, you can do almost anything with these gorgeous greens.  I&#8217;ve been treating these pretty leaves like spinach.  Whatever you can do with spinach, you can do with amaranth greens.  They&#8217;re great lightly steamed and seasoned, they&#8217;re a great salad green, they&#8217;re kind of perfect.

<p>Amaranth greens (or quelites) have been eaten for a long time.  Here&#8217;s a little <a href="http://crookedskyfarms.com/csf/?p=169" target="_blank">history I posted before</a>.</p>
<p>This past week:</p>
<p>1. I&#8217;ve chopped some into a chopped bean salad where I put a can of rinsed <strong>beans</strong> <strong>+</strong> <strong>chopped up various crunchy veggies</strong> I had in the fridge (I had celery, bell pepper jicama and carrot) <strong>+ cheese</strong> (parm) <strong>+ salad dressing</strong> (you can use bottled or I just squeezed a 1/2 lemon and added a splash of  balsamic and drizzled olive oil &#8217;til it tasted good) <strong>+ salt &amp; pepper</strong></p>
<p><strong><span style="font-weight: normal;">2. I tossed some into my stir fry &#8217;til it wilted and</span></strong></p>
<p><strong><span style="font-weight: normal;">3. Today I plan to use up my bunch by cramming as many leaves as I can on top my simple tuna salad sammy (can of tuna in water drained + mayo + dill)  - I know, I know, it&#8217;s not the fancy scrumptious italian way in olive oil with olives and red onion like Chris Bianco does at <a href="http://www.pizzeriabianco.com/pane/">Pane</a>&#8230;but it&#8217;s the way I make it at home.  My mom made it with the mayo and my college roomie added the dill weed and now it&#8217;s my way. <img src='http://crookedskyfarms.com/csf/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </span></strong></p>
