Weekly Meal Plan - Around the World in a few days

Greetings CSA members and market friends,

I hope you’re having a wonderful week and I hope you enjoy this week’s meal plan.  As always, we’d love to know what you do with your share/market finds!!

Here’s what I got this week (again, your share might be slightly different):

Carrots

Bright Lights Swiss Chard

Broccoli Rabe (just the leaves)

Dinosaur/Black/Lacinato Kale

Detroit Red Beets

Cilantro

Turnips

Green Onions

I did do a mega washing, prepping, chopping spinning (in a salad spinner) session this week after bringing all the veggies home.  It took me a good hour.  Sheesh! But I’m going to be very glad that I did so come dinner time.

Here is a pretty pic from yesterday - I didn’t realize I’d arranged them like a heart.  Very appropriate for Valentine’s Day:

Here’s what I plan to make this week - keep in mind that I have a 2 year old and I try to make the food fun, not just fancified:

Nuggets with homemade ketchup (using some of the roasted carrots) and roasted carrots (recipe: cook carrots peeled and chunked (or not) and tossed with olive oil, salt and pepper in a hot oven 450 or so until done)

Apple Cheese Chard Fritatta (using the swiss chard and some green onions) - The Splendid Table’s How to Eat Supper Cookbook (it’s fab, go get it)

Orecchiette with Turkey Sausage and Broccoli Rabe (recipe halved) this is simple and really delicious

Snack: Kale Chips (haven’t done this yet, thought I’d try it out)

Beet Salad (apparently it’s the best beet salad evah! - or so it says - not one I’ve tried but I’m sure it’ll turn out great - oranges, walnuts…can’t go wrong)

Lebanese Potato Salad (also using green onions) - this is super awesome.  It’s my go to potato salad.  I might have blogged this before.

Cottage Pie (using turnips instead of potatoes, and some carrot from this week’s share) - sounds great for some of these grey days this week.
